From Our Chef to Your Table

How to make grilled artichokes with Executive Chef Robert Hohmann:

ARTICHOKESArtichokes can look intimidating, but when prepared correctly they yield incredibly delicious results. Whether you’re an artichoke expert or trying this leafy vegetable for the first time, let our chef show you a delicious way to maximize the flavor and texture while creating a Roosevelt worthy dish.

Ingredients

  • 4 artichokes
  • 2 sprigs lavender
  • 2 sprigs thyme
  • 2 sprigs rosemary
  • 1/2 gallon water
  • 3 lemons
  • 1 oz. olive oil
  • Salt and pepper to taste

Steps

  1. Trim the stem and outer leaves of the artichokes; then trim an inch off the top of the artichokes.
  2. Place the artichokes in a dutch oven along with the lavender, thyme, rosemary, and juice from the lemons.
  3. Pour the water in the dutch oven over the artichokes and seasoning. Cover with lid.
  4. Cook in the oven at 375° for 35-40 minutes.
  5. Remove the artichokes from the oven, take them out of the braising liquid, and place them upside down on a cooling rack for about 10 minutes to drain the liquid.
  6. When the artichokes are warm to the touch, cut them in half, and remove the purple inner leaves as well as the pith off the top of the hearts.
  7. Toss the artichokes in a bowl with olive oil, salt, and pepper.
  8. Grill the artichokes for about 10 minutes, flip to get a good char on both sides.
  9. Mix all the remoulade ingredients together in a large mixing bowl; serve with the artichokes.

90 Years of Hospitality

As of September 22nd, 2014 The Roosevelt Hotel has been in operation for 90 Years!

There’s a lot in a name. Names hold power, tradition, history, and meaning. A name is something passed down from generation to generation, telling us where we came from and who we are. We at the Roosevelt are proud of who we are, as well as our namesake. That’s why for our 90th anniversary we invite guests with the last name Roosevelt to book one night for $90 here at our hotel through March 31st, 2015.

1924 & 2010

Since opening in 1924 the “Grand Dame of Madison Avenue” has seen a lot. Through the years our 1,015 renovated rooms have housed many historical figures. Guy Lambardo first began broadcasting “Auld Lang Syne” from our Roosevelt Grill, Governor Thomas Dewey erroneously announced his victory over Harry S. Truman from our halls, and private guests entered into our midst by way of a secret underground passage connecting the hotel with Grand Central Station. The Roosevelt has also been featured in many Hollywood productions like “Mad Men,” “Man on a Ledge,” “Men in Black 3,” and “Maid in Manhattan.”

Whether they dine at our 19th floor rooftop bar or in the street side-restaurant, or simply take in the neo-classical architecture of the lobby, the Roosevelt offers everything our guests’ desire. No matter the occasion, the Roosevelt has served at the forefront of the New York hospitality for the last 90 years, and we plan to continue for the next 90 and beyond.
